Applefest 2014, Part 1: Homemade apple juice!

I mentioned last year that we had a few apple trees on our property. Two large ones that produce very decent cooking/eating apples and two smaller crabapples. All of them were very prolific this year, owing to a gentle spring followed by generously long growing season. For the past two years, I’ve been using a blend of these apples to make a very nice juice. Which is great, since apple juice is something we like to have in the fridge all the time and that can get spendy with Finnish grocery prices. Our two larger trees in flower earlier this …

Cooking with Keva: Spaghetti with Tuna Sauce

I will be away from the computer for the next few days because we are spending this fine midsummer weekend at the boy’s grandparents’ summer cottage in the archipelago. Usually, I would just schedule some posts and be done with it, but my Facebook crossposter has not been very happy since the latest WordPress upgrade, so I guess I’ll just let it sit for now. See you guys on Monday! Boo. It makes me sad that this is the first Cooking With Keva post that I’m doing without having actually made it with my friend Keva 🙁 However, it is in …

Cooking with Keva: Westernized Baked Teriyaki Chicken

I call this a “westernized” recipe because I have watched my mother make real teriyaki sauce before and the ingredients list looked NOTHING like this. However, we’ll do that recipe (which is equally easy, but requires a pantry with more Asian ingredients than I have at the moment) some other day, if only for the sake of comparison. The version I give you now is fairly good at achieving something similar-looking to classic teriyaki (which by definition just means “stuff to make your grilled meat shiny” anyway) and is made from stuff that’s easier to pick up at any old …

Cooking with Keva: Oven Fried Chicken

Part two of this past weekend’s kitchen endeavors with Sassy. In which it was explained that while fried chicken is yummy, homemade fried chicken usually involves more pain, danger and mess than I like deal with on a regular basis. Why not let the oven do the hard work instead? The way I see it, the less contact with scalding globs of grease, the better. It should also be noted that the boy and I contentedly dug into these leftovers for three days in a row without feeling it was getting either old or tired. So something was definitely right …

Cooking with Keva: Garlic Red Potatoes

I promised Sassygurl that she’d get her own column because I try to make fairly simple dishes with her every week to get her more kitchen experience. It’s also an excuse for me to not do the slicing and whisking for one day a week 😉 This past weekend we made a main dish and a side dish, so this will be post one of two. Garlic Red Potatoes, one of those easy side dishes that takes only minutes to prepare but keeps on givin’ throughout the week. It goes great with just about any meat or veggie dish and …
